Have never had to change coolant on a cooling system without a radiator cap on it. Any tips or pitfalls to watch out for when doing this on my 2005, 35S12 will be greatly appreciated.

The image in attachments is for the F1A engine.

I usually drain the system, then fill with fresh water, run/drive the engine until the operating temp is reached, let it cool and drain, do this 3 or 4 times to remove all/most of the old antifreeze mix.
Don't run the engine too long on fresh - some modern engines corrode with fresh water in them. I don't know if the Iveco engines are tolerant or not.

If the system is not flushed in this way there shall be amounts of the old antifreeze still in the engine after one draining.

Drain into a measure/ measure how much comes out, that way you can know how much is left in the engine and can adjust the new mix to suite.
I have not seen what the coolant volume is nor is the mix nor is the drain point(s) indicated in the wkshp ml.
